Prost Brewing Co. is officially brewing on its new German-imported 50-barrel Kaspar Schulz brewing system. This authentische (“authentic”) brewing system at Prost’s Northglenn brewery headquarters blends state-of-the-art brewing technology with Prost’s traditional German brewing techniques, resulting in some of the finest German-style biers available in the United States.
The Kaspar Schulz brewing system is one-of-a-kind, a marvel of engineering, combining modern efficiency with age-old brewing techniques. Its sustainable design reflects Prost’s commitment to environmentally friendly brewing practices. This fully automated 6-vessel system includes:
- Mash Kettles: to allow standard and decoction mashing, a traditional method that enhances malt profile and complexity.
- Lauter Tun: to separate the wort from the grain, ensuring clarity and purity.
- Wort Receiver: to collect the wort from the lautering process, preparing it for boil.
- Boil Kettle: equipped with an external calandria, allowing precise temperature control and efficient heat use, significantly improving the boiling process while conserving energy.
- Whirlpool: to remove hop residues and trub, resulting in a cleaner, clearer wort.
- Expansion Evaporator Vacuum Boil: an innovative feature to reduce boiling temperatures, preserving delicate aromas and flavors while ensuring energy efficiency.
- Open Fermenters : uses traditional German unsealed vessels to collect CO2, monitor yeast health, and remove unwanted materials from the surface, resulting in an exceptionally smooth and clean finished product.
- Horizontal Lagering Tanks: allows sediment to settle for clearer bier & natural carbonation. The lagering process takes place at a lower temperature for a longer time.

“To create the most authentic German-style biers possible, we have installed these beautiful Kaspar Schulz open fermentation vessels. Installed inside our specially designed clean room, these beauties will allow our scientists to monitor yeast health, skim unwanted hop resins, and allow for the off gassing of excess sulfur and other unwanted aromatic compounds,” said Chris O’Connor, Vice President of Brewery Operations.
Kaspar Schulz was founded in 1677 in Bamberg Germany and is the world’s oldest brewhouse manufacturer. For the past 347 years the world-renowned team has built upon tradition to engineer innovation. The prestigious manufacturer is known for making German-quality equipment that is unique in process and design.
The brewery also includes German-imported equipment from Kunzel Milling. A 6-roller miller with automatic gab settings, husk separation, super sack and silo malt offerings, including an endosperm mashing that delivers a flavor depth not found in typical US breweries.
