The science behind brewing is ever changing and always interesting, so it’s always a treat to hear the experts in the craft industry discuss the chemistry behind making their excellent beers. Here Grant Wood, the senior brew master at Boston’s Samuel Adams, takes us on a quick tour of their world famous facility and gives a chemical explanation of the traditional four vessel beer brewing process. Wood gets into the particulars with this short, grabbing a hop, breaking it open and discussing the Lupulin glands, containing the resins and essential oils. He jumps to vessels, detailing mashing kettles and mash tun temperatures and processes.
