Karl Strauss Brewing Company, now in its 35th year, is opening its newest brewpub at The Shops at Dos Lagos in Corona on Tuesday, October 1. The Dos Lagos location will be the brewery’s second in Riverside County and its ninth overall in Southern California.
“We’ve been brave enough to do things our way since 1989—being creative while holding fast to the traditions of independence that built us,” said President Matt Rattner. “Opening in Corona is a chance to bring that spirit to a new community and share the full Karl Strauss experience. For us, it’s about creating something meaningful with every beer, and we’re excited for Dos Lagos community to become part of the story.”
Not every venture has totally worked — the company’s outdoor taproom experiment, The OutPost, closed in August. But it was a cool idea worth trying. As a Southern California original, Karl Strauss has been continually forging the way while staying true to its roots by bringing San Diego-style beers to fans.
“We’ve never been ones to follow trends for the sake of it. Our approach has always been to stay true to who we are, while embracing the brave firsts that keep us moving forward,” said CEO Chris Cramer. “At Dos Lagos, we’ll serve those who crave quality —whether you’ve been with us since the beginning or you’re ready to experience Karl Strauss for the first time. It’s a place to enjoy great beer and raise a toast to the moments that matter.”
With Dos Lagos joining the Temecula brewpub, Karl Strauss is expanding its footprint in Riverside County, creating a space where craft beer and great food come together. The new brewpub will feature 16 taps offering a mix of classic and seasonal beers, alongside wine, seltzer, kombucha, beer cocktails, and non-alcoholic options—ensuring there’s something to imbibe for everyone.
Executive Chef Gunther Emathinger, who has been with Karl Strauss for over 26 years, will lead the beer culinary connection at Dos Lagos, bringing his passion for bold flavors to a menu that complements the brewery’s distinctive beers. Menu highlights include Duck Fat Pretzel Bites, Ahi Poke Nachos, Food Truck Burger, and the Beeramisu, a tiramisu soaked in Wreck Alley Imperial Stout. Seasonal pairings will rotate quarterly, starting with Pork Schnitzel Sliders paired with Oktoberfest, and a Goat Cheese & Melon Salad paired with Follow the Sun Lager.
Opening celebration
To celebrate the opening, Karl Strauss Dos Lagos will offer a $20 Beer & Burger special Monday through Thursday from 11:00 a.m. – 5:00 p.m., along with Happy Hour featuring $6 Karl beers and $10 appetizers from Monday to Thursday, 3:00 – 6:00 p.m. The brewpub will also open early for KARL’s Football Fundays, with doors opening at 9:00 a.m. on Saturdays and 10:00 a.m. on Sundays.
From San Diego to Los Angeles, and now Corona, Karl Strauss continues to be a leader as the craft beer movement reaches a new generation, serving up quality, authenticity, and community. With new beer releases, collaborations, and special events planned for 2024, the Dos Lagos brewpub will be a place where legacy blends with creativity, and every guest is invited to raise a glass to brave firsts.
