Back in December, Westbound & Down Brewing Co. (W&D) announced it had acquired Aspen Brewing Co. and Capitol Creek Brewery from High Country Brewing LLC. At the time, W&D noted the addition of Aspen Brewing and Capitol Creek Brewery continued its investment in brewpubs that further help to enhance its outdoor adventure experiences in and around mountain towns. Westbound & Down Brewing just announced a retro ’80s-style popup at Aspen Brewing. Fresh off of Westbound’s recent acquisition of Aspen Brewing, the Mountain-centric brewpub is creating a temporary tavern where patrons can sample Westbound & Down beers and tavern-style pizza.
Dubbed Westy’s Tap & Tavern Pop-Up at Aspen Brewing, the pop-up menu, which was created by Westbound’s Chef Casey Taylor, will feature crispy, thin-crust tavern-style pizzas made with stone milled local organic flour, 48-hour fermentation dough and toppings of your choice. Specialty versions of these tavern-style pizzas include pistachio, sunchoke, Hawaiian, sopressata, and forager-themed toppings as well as more traditional pies like cheese, pepperoni and sausage.
Additionally, Westbound will officially introduce itself to the Aspen community by lending a handful of beers to the Aspen Brewing draft and to-go menus with offerings like Westbound Italian Pils, Westbound The Coloradan Mexican Lager, Westbound Don’t Hassle the Hefe Hefeweizen, Westbound Colorado Pale Ale, Westbound IPA, Westbound Juice Caboose Hazy IPA and Westbound Oodles of Oats Stout.
Westy’s Tap & Tavern Pop-Up will be open for Aspen Brewing’s normal hours of operation Monday through Sunday from 12 to 9 p.m. and feature a happy hour every day from 3 to 5 p.m.
