Lautering is the brewing process in which the mash (the mix of milled grain and water) is separated into the clear liquid wort and the residual grain. The lauter tun is the traditional vessel used for separation of that extracted wort. While the basic principle of its operation has remained the same since its early uses, technological advances have led to better designed lauter tuns capable of quicker and more complete extraction of the sugars from the grain.
