After extensive development and industry trials, Gusmer Enterprises Inc. has introduced KICK Carrageenan kettle finings. Kettle finings have been used extensively in the brewing industry to improve the clarity and stability of wort and beer. KICK Carrageenan is purified kappa carrageenan, a high molecular weight polysaccharide derived from red seaweed. When added near the end of the boil, KICK Carrageenan binds to haze-forming proteins and other small particles and flocculates rapidly, promoting an improved “hot-break” in the whirlpool vessel and improved “cold-break” during fermentation/ageing, the company explained. Kosher Pareve-certified and domestically formulated under GMP conditions, KICK Carrageenan is available in three different formats and pack sizes to best meet the diverse needs of brewers.
KICK Carrageenan G: 100 percent granular kappa carrageenan. The particles are large, free flowing to facilitate ease of handling and low dust. Can be added to beer labeled as “organic” or “made with organic.”
Typical Dose Rate: 10-60 ppm, 20 min before end of boil.
Package Size: 10 kg box, polythene sealed liner
KICK Carrageenan T: Refined kappa carrageenan in tablet form. The tablet format provides a convenient delivery method that encourages rapid disbursement in the kettle.
Typical Dose Rate: 1 tablet (~30 g)/5 U.S. barrels (bbls), 20 min before end of boil.
Package Size: 10 kg box, sealed nylon bag
KICK Carrageenan Micro-T: Similar to the KICK Carrageenan T, but in a small tablet format.
Typical Dose Rate: 1 tablet (~1 g)/5 gallons, 20 min before end of boil
Package Size: 1 kg box, sealed nylon bag
