Because beer is affected by light and temperature, the process of beer-making involves storage in a dark place where it can be kept cool — a place much like a cave. Before refrigeration, back in the 19th century and early 20th century, brewers would store their beer in actual caves — both man-made and natural. Today, Boulevard Brewing Co. has kept that tradition and actually has a cave where it stores more than 1,200 wine and spirit barrels used to barrel-age its delicious craft beer.
