Some may say that malt is the backbone of a good beer. While the hops, spices, fruits and anything else thrown into the mash might give a brew it’s personality, the malt provides body. At Craft Brewing Business, we’re researching our big malt feature investigating craft beer malt trends and brewing tips, and we came across a most insightful video of Briess Malt and Ingredients Co. malt masters measuring the color of roasted malts.

Here’s how the color of malt is measured during the roasting process. The roaster operator pulls a sample from the drum roaster then cools the hot malt over a fan. The sample is then ground into a fine flour and visually compared to a control. As you can see at the end of this video, the roasting malt is lighter than the control. The operator would have continued pulling and checking samples until the correct color was developed.
